
Banana Buckwheat Pancake
Ingredients
1 cup buckwheat flour
1 tbsp maple syrup or honey
1 cup unsweetened rice milk
1 ripe banana, mashed
2 tbsp ground flax
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp sea salt
1/2 tsp organic vanilla extract
1 tbsp coconut oil
Instructions
In a large mixing bowl, mix all the dry ingredients together.
In another small bowl, combine mashed banana, rice milk, vanilla extract and syrup/honey together. Then pour liquid ingredients into dry ingredients and mix together (should be thick and lumpy).
Using medium heat, grease pan with coconut oil (use small amount to coat the pan), pour a small ladle of batter onto pan. Flip pancake when it is brown on one side then cook other side for about 2 minutes until fully cooked.
Enjoy with your favourite fruits on top.
