Coconut carrot cake balls

Serves 30

Ingredients

  • 2 carrots peeled and roughly chopped

  • 1.5 cups raw walnuts

  • 1 tsp vanilla extract

  • 1 ripe banana

  • 1 cup organic oatmeal

  • 1 tsp sea salt

  • ½ tsp cinnamon

  • 10 medjool dates (pits removed)

  • ¾ cup shredded coconut

  • ¼ cup shredded coconut (reserved for rolling the ball)

Instructions

  1. Put all the ingredients in the food processor. Blend all your ingredients together until a thick paste forms.

  2. Roll into balls, roll in shredded coconut and eat them! They taste good either at room temperature or cold from the fridge as well, whichever you prefer.
